I whipped this up on a whim yesterday and I'm glad I did. It works well with rice, which is what we had with this. And it's actually very hearty (270 calories per serving). It was really quick and easy to cook. The recipe called for just the basic spices (salt & pepper), but I added a little cumin to make it my own a bit.
Ingredients: two tablespoons of extra virgin olive oil, one small yellow onion (sliced thinly), 1/2 pound of spicy chorizo or andouille sausage (sliced and fully cooked), 1 & 1/2 cups (one can) of cooked chick peas (rinsed and drained), 1/8 teaspoon of sea salt, 1/2 teaspoon of ground pepper, 1 tablespoon of cumin
1. Heat the olive oil on the pan on medium. Add your thinly sliced onions into the pan and mix. Let the olive oil become infused with the onion (this takes about eight minutes, but stir continuously)
2. Add your cooked and sliced chorizo into the pan. Mix for about three minutes, until incorporated with the other ingredients.
3. Add drained and cooked chick peas into the pan and mix. Mix for three minutes, until well incorporated into the other ingredients.
4. Serve and enjoy!
