This whole week for lunch I've been having a toasted ham sandwich with blue cheese and avocado. It's a very simple lunch (but lunches should be simple anyways). I paired it with crab chips on the first day and the next following days I had the sandwich with a side of pita chips. This recipe is so simple (I'm not even sure whether to even call it a recipe), but definitely very filling.
Ingredients: Your choice of bread (I bought a loaf of Italian and sliced it myself), applewood smoked ham, your choice of blue cheese, and 1/4 of an avocado.
1. Place your ham on top of one of the two slices of bread. Place both slices of bread on a baking sheet. Broil it for about five minutes in an oven or toaster oven on medium-high, but keep an eye on it.
2. Slice a portion of your blue cheese and crumble it. Set it aside. Once both slices are crusty and the ham is warm, but not yet brown, sprinkle the crumbled blue cheese over on the same slice the ham is on. Place back into the oven/toaster oven.
3. Slice the avocado into strips inside its skin. Then, gently use a spoon to scoop out its slices.
4. Take the slices out of the oven and place the avocado slices on top. Serve with chips, soup, or salad.
