BEIGNETS


Just in time for summer, these beignets are one of my favorite recipes. Serve them on a wooden toothpick for a barbecue, pack them in a packaged box as a gift, or have them with your usual tea. These are perfect for any occasion. As you see here, I coated them in granulated sugar and served them with strawberries.

Ingredients: 1/2 teaspoon of yeast, 3/4 cup of flour, 1/4 cup of water, 2 tblsp. of sugar, a pinch of salt

Directions:

Dump the yeast into a mixing bowl and add in water to dissolve. Add in sugar and salt. Mix to form a dough. The dough should not too dry/floury or wet, but a tiny bit moist. Cover the bowl with a clean dish towel. Let it stay at room temperature with the dish towel over it overnight.

When the dough is ready, heat either canola or vegetable oil in a small pot (sauce pans cause oil popping). When the oil is hot, use two teaspoons to scoop a about a teaspoon to a tablespoon of dough into the pot. Repeat. Don't fill the pot, the dough may stick to each other. When it is golden brown on the bottom, flip to cook the opposite side. Repeat. Toss with as much sugar you want.
